Pain moelleux aux lentilles

Sur le plan nutritionnel :

  • riche en protéines végétales

  • sans gluten, sans farine 

  • très rassasiant

  • présence de fibres : excellent pour le microbiote + aide à stabiliser la glycémie


Teneur en protéines :

Environ 42g pour le pain entier.

Si vous le coupez en 8 parts : environ 5,2 g par part.



Ingrédients

  • 150 g lentilles corail sèches

  • 2 cas huile d’olive

  • 2 cas yaourt (j’ai utilisé du skyr)

  • 1 cac sel

  • 1 cac paprika

  • 1 cac cumin

  • 1 cac levure chimique ou bicarbonate 

  • 20g psyllium


Préparation

  1. Faites tremper les lentilles dans de l’eau pendant 2 heures

  2. Égouttez et rincez

  3. Préchauffez le four à 180°C

  4. Mixez lentilles + huile + yaourt + sel + épices (vous devez obtenir une pâte épaisse)

  5. Ajoutez la levure / bicarb + psyllium et mélangez 

  6. Formez un pain avec les mains humides

  7. Déposez sur une plaque (option topping : graines de sésame)

  8. Enfournez 25 à 30 minutes

Ingredients

  • 150 g dried red lentils

  • 2 tbsp olive oil

  • 2 tbsp yogurt (I used skyr)

  • 1 tsp salt

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 tsp baking powder or baking soda

  • 20 g psyllium husk


Instructions

  1. Soak the red lentils in water for 2 hours.

  2. Drain and rinse thoroughly.

  3. Preheat the oven to 180°C (350°F).

  4. Blend the lentils, olive oil, yogurt, salt, and spices until you obtain a thick batter.

  5. Add the baking powder (or baking soda) and psyllium husk, then mix well.

  6. Shape the dough into a loaf using wet hands.

  7. Place it on a baking tray (optional topping: sesame seeds).

  8. Bake for 25–30 minutes.
